  1. 1 cup of Maida or white flour 
  2. 1 cup of Milk powder
  3. A pinch of Baking soda
  4. 2 tablespoons of Curd
  5. 2 tablespoons of Ghee
  6. 1 cup of Sugar
  7. 1 cup of water
  8. 3 to 4 Elaichi (Cardamom)


Preparation of Nikuti Sweet/ Nikuti Misti


The preparation of Nikuti sweet is very easy. You need to mix all ingredients in a proper amount to extract the ultimate taste of Bengali sweet nikuti. Check below for the best Bengali Nikuti recipe

Step 1:

Take a big mixing bowl and mix the ingredients well one after another like Maida, Milk powder, and Baking soda.

Step 2:

After mixing the dry ingredients; now add 1 spoon of ghee and 2 spoons of curd to make the dough. Keep adding the curd as much as required to make the soft dough.

Step 3:

The dough needs to be very smooth. Now start making very small balls. Make sure the balls should not have any cracks or else all the energy will be in vain.

Step 4:

Take a deep frying pan. Add the rest of the ghee. Fry all the small balls red.

Step 5:

Sugar Syrup- Now it's time to prepare the sugar syrup for nikuti misti.
You need a medium-sized bowl.
  • Add the water and give it a good boil on a high flame.
  • Now add the sugar and mix well.
  • Add the Cardamom means Elichi to a good smell as well as flavour to the syrup.
  • When the water starts becoming a little sticky, switch off the flame. 


Step 6: 

When the syrup is ready for nikuti misti, add all the nikuti in it and leave it for 1 hour at least to soak the sweetness.

Payesh is a cousin and sister of Kheer. It is emotionally attached to the Bengalis. They believe that this special sweet brings good luck in one's life. So birthdays, puja, and other special pious occasions are incomplete without Payesh.

  1. 1 cup of Maida or white flour

  3. 2 tablespoons of Curd
  4. A Pinch of Baking soda
  5. 2 tablespoons of Ghee
  6. 1 cup of Sugar

  8. 3 to 4 Elaichi

  1. 4 cups of milk
  2. Half cup Sugar. You can use Nalen gur instead of sugar
  3. 2 cinnamon sticks
  4. saffron or different nuts including almond, and pasta. (Optional)



Process of Making Nikuti Payesh


First, let's prepare the nikuti.

Step 1:

Mix all the dry ingredients including powdered milk, maida, and baking soda very well.

Step 2:

Now add the ghee to give a good flavour. Then, curd to make the dough.

Step 3:

Make small oval shape smooth balls without any cracks.

Step 4:

Fry all the balls in a deep frying pan. Leave it to come at room temperature.

Step 5:

Now prepare the sugar syrup with water, sugar, and the cardamoms. After that dip all the balls in the hot sugar syrup.

So the first step; preparing the nikuti are ready.

Now it's time to prepare the Payesh.

Step-by-Step Nikuti Payesh Preparation


Step 1:

Boil the milk in a medium flame and make it half.

Step 2:

Now add the cinnamon and sugar or jaggery and mix it well. Keep stirring it or else the milk can burn.

Step 3:

Now off the flame, add all the nikuti and mix with a spoon. Nikuti Payesh is ready.

You can garnish the Payesh with a pinch of saffron or different crushed nuts.
