Take a big mixing bowl and mix the ingredients well one after another like Maida, Milk powder, and Baking soda.

Process of Making Nikuti Payesh
First, let's prepare the nikuti.
Step 1:
Mix all the dry ingredients including powdered milk, maida, and baking soda very well.
Step 2:
Now add the ghee to give a good flavour. Then, curd to make the dough.
Step 3:
Make small oval shape smooth balls without any cracks.
Step 4:
Fry all the balls in a deep frying pan. Leave it to come at room temperature.
Step 5:
Now prepare the sugar syrup with water, sugar, and the cardamoms. After that dip all the balls in the hot sugar syrup.
So the first step; preparing the nikuti are ready.
Now it's time to prepare the Payesh.

Boil the milk in a medium flame and make it half.
Step 2:
Now add the cinnamon and sugar or jaggery and mix it well. Keep stirring it or else the milk can burn.

Now off the flame, add all the nikuti and mix with a spoon. Nikuti Payesh is ready.
You can garnish the Payesh with a pinch of saffron or different crushed nuts.
